Manuel Gonzalez, our Emerging Technology Editor, is a retired R&D Manager for a major oil company. He worked closely with Los Alamos National Labs, NASA JPL, and the DOE. He holds 24 patents and many US and international Technology awards. Now he does private consulting. Gonzalez was born in Cuba. When he was only 8 years old, Fidel Castro took over Cuba in a violent coup. Even at such a young age, Gonzalez was no fan of communism and following his parents and siblings, boarded the last American flight out of Havana, barely avoiding arrest and imprisonment.

On this Father's Day I wanted to put my feelings for my Dad in writing. This is a fascinating story of quite a man. He was born in Cuba in 1903. He attended the Cuban military academy in Havana Cuba graduating #1 in his class.

The phrase: “The science is settled” and “The majority of scientists agree,” is purely political rhetoric and a perversion to the scientific principle. Let me explain. For those following the keto way of eating, I will discuss the GE DEXA scan. In Houston there is a clinic called that provides the scans. It is a GE scan (similar to a CAT SCAN) that is used by hospitals, the Doctors also use it to determine bone density. It only takes about 7 minutes. I

here are only two ways for your body to create energy. The first is to process carbs to burn glucose, the second way is to burn fats into ketones. To do the later, you have to cut out most carbs, and reduce your total calories. This takes about 3-6 days, and it will be tough. Your body must switch from carb to fat burning. You can track this using urine ketone strips that you can buy in any drug store. You can also use a more accurate and expensive blood ketone meter.

My name is Manny Gonzalez and this is a series about my journey to health using a low carb diet approach and exercise. Be incredibly careful about using the FDA’s food pyramid guidelines. There is much misinformation about diets and how to eat to get healthy. There are hidden agendas that push for low fat diets that do more harm than good. In my case a high carbohydrate, low fat diet was a ticket to Diabetes type 2. First, let me clearly state that my solution to overcome this problem involved a low carbohydrate and high fat diet. I used the Keto diet (that I have been on for the last 3 years and 5 months). The diet was carefully monitored by my doctors at the University of Texas Medical Branch at Galveston (UTMB). Please always follow your doctor’s advice. Now, I will tell you about my journey towards health.
